I think I may have found her! I spent hours on http://www.ancestry.com/ looking through Loftin records and now I think I have a name for her, MARY A. E. LOFTIN, Dau of Jesse and Nancy McBroom and wife of Eschew (Askew) Loftin.
I started out with this Census record from 1900.

Thadeus Henderson 'Coop' Loftin is also buried in Antioch Cemetery. But the nickname "Coop" was not on his headstone.

So I started backtracking from there. And I found a 1860 Census that listed Thadues's parents as Eschew (Aschew) Loftin and Mary A E Loftin.

If you look at http://history-sites.com/~kjones/48hmstr.html you will notice Askew went to battle with a few of Mary's brothers.
I recently recieved an email from a family member of Askew's who has been working on their family tree who confirmed that this is Mary A. E. McBroom Loftin's grave. She also informed me that "Askew died 11 Sept 1862 in Richmond, VA after the Battle of Manassas. It is believed that he died of disease in the hospital, rather than from a battle wound. I have been in contact with the national cemeteries in the area and none have a record of his grave. They feel that he may have been buried in a mass grave, which was not uncommon during the war."
By 1870 she was widowed.
